Chicken Noodle Soup

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, minced garlic, diced celery, and diced carrots. Cook until vegetables are soft, about 5 minutes.
  3. Add chicken breast to the pot and cook for 5 minutes, until lightly browned.
  4. Pour in chicken broth and water. Bring to a boil.
  5. Add egg noodles, thyme, and basil. Reduce heat and let simmer for 15-20 minutes.
  6. Shred the chicken using a fork, then add it back to the pot.
  7. Season with salt and pepper, to taste.
  8. Simmer for another 5 minutes.
  9. Serve hot and enjoy your delicious homemade chicken noodle soup!
