Chicken Noodle Soup
Ingredients:
- 1 pound boneless, skinless chicken breast
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 2 carrots, peeled and diced
- 6 cups chicken broth
- 1 cup water
- 8 ounces egg noodles
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper, to taste
Instructions:
- In a large pot, heat olive oil over medium heat.
- Add diced onion, minced garlic, diced celery, and diced carrots. Cook until vegetables are soft, about 5 minutes.
- Add chicken breast to the pot and cook for 5 minutes, until lightly browned.
- Pour in chicken broth and water. Bring to a boil.
- Add egg noodles, thyme, and basil. Reduce heat and let simmer for 15-20 minutes.
- Shred the chicken using a fork, then add it back to the pot.
- Season with salt and pepper, to taste.
- Simmer for another 5 minutes.
