Chicken Kiev

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a small bowl, mix together the butter, garlic powder, parsley, chives, and tarragon.
  3. Place chicken breasts between two sheets of waxed paper, and pound to 1/4 inch thickness.
  4. Spread butter mixture over each flattened chicken breast, leaving a small border around the edges.
  5. Roll chicken breasts up, tucking in the sides to seal in the butter mixture.
  6. Season chicken rolls with salt and pepper.
  7. Dip each chicken roll in flour, then beaten egg, and finally in breadcrumbs, coating evenly.
  8. Heat oil in a large skillet over medium heat.
  9. Carefully place chicken rolls in the skillet, and cook for 3-4 minutes on each side, until golden brown.
  10. Transfer chicken to a baking dish, and bake in the preheated oven for 20-25 minutes, until chicken is cooked through.
  11. Cut chicken rolls in half before serving to reveal the delicious herb and butter filling inside.
