Chicken Kiev
Ingredients:
- 4 skinless, boneless chicken breasts
- 1/2 cup butter, softened
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1 teaspoon dried chives
- 1 teaspoon dried tarragon
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Salt and black pepper to taste
- Oil for frying
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, mix together the butter, garlic powder, parsley, chives, and tarragon.
- Place chicken breasts between two sheets of waxed paper, and pound to 1/4 inch thickness.
- Spread butter mixture over each flattened chicken breast, leaving a small border around the edges.
- Roll chicken breasts up, tucking in the sides to seal in the butter mixture.
- Season chicken rolls with salt and pepper.
- Dip each chicken roll in flour, then beaten egg, and finally in breadcrumbs, coating evenly.
- Heat oil in a large skillet over medium heat.
- Carefully place chicken rolls in the skillet, and cook for 3-4 minutes on each side, until golden brown.
- Transfer chicken to a baking dish, and bake in the preheated oven for 20-25 minutes, until chicken is cooked through.
- Cut chicken rolls in half before serving to reveal the delicious herb and butter filling inside.
