Chicken Gumbo
Ingredients:
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 1 cup diced onion
- 1 cup diced green pepper
- 1 cup diced celery
- 1 cup sliced okra
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions:
- In a large pot, cook chicken over medium heat until no longer pink. Remove from pot and set aside.
- In the same pot, sauté onion, green pepper, and celery until tender, about 5 minutes.
- Add okra, diced tomatoes, chicken broth, bay leaf, thyme, oregano, garlic powder, cayenne pepper, and salt and pepper to the pot. Stir to combine.
- Bring mixture to a boil, then reduce heat and let simmer for 20 minutes.
- Add cooked chicken back into the pot and let simmer for an additional 10 minutes.
- Remove bay leaf before serving.
- Serve over rice or with crusty bread. Enjoy your delicious chicken gumbo!
