Chicken Gumbo

  1. In a large pot, cook chicken over medium heat until no longer pink. Remove from pot and set aside.
  2. In the same pot, sauté onion, green pepper, and celery until tender, about 5 minutes.
  3. Add okra, diced tomatoes, chicken broth, bay leaf, thyme, oregano, garlic powder, cayenne pepper, and salt and pepper to the pot. Stir to combine.
  4. Bring mixture to a boil, then reduce heat and let simmer for 20 minutes.
  5. Add cooked chicken back into the pot and let simmer for an additional 10 minutes.
  6. Remove bay leaf before serving.
  7. Serve over rice or with crusty bread. Enjoy your delicious chicken gumbo!
