Chicken Enchiladas
Ingredients:
- 8 Flour Tortillas
- 2 cups diced cooked chicken
- 1 cup shredded cheddar cheese
- 1 can (10.75 oz) condensed cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup salsa
- 1 can (4 oz) diced green chilies
- 1/4 cup chopped fresh cilantro
Instructions:
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, 1/2 cup of the shredded cheese, cream of chicken soup, sour cream, salsa, green chilies, and cilantro.
- Place a spoonful of the chicken mixture onto each tortilla and roll tightly. Place the tortillas seam-side down in a 9x13 inch baking dish.
- Pour remaining chicken mixture over the enchiladas and top with the remaining 1/2 cup of shredded cheese.
- Bake for 20-25 minutes or until cheese is melted and bubbly.
