Chicken Chimichangas
Ingredients:
- 1 pound chicken breast, cooked and shredded
- 1 onion, diced
- 1 red bell pepper, diced
- 1 jalapeno, diced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cheddar cheese, shredded
- 6 large flour tortillas
- Oil for frying
Instructions:
- In a large skillet, heat olive oil over medium heat. Add onion, red bell pepper, and jalapeno. Cook for 5 minutes or until vegetables are soft.
- Add garlic and cook for an additional minute.
- Stir in cooked and shredded chicken, cumin, chili powder, salt, and black pepper. Cook for 2-3 minutes, stirring occasionally.
- Remove from heat and stir in shredded cheese.
- Place about 1/2 cup of the chicken mixture onto each tortilla. Fold in the sides and roll the tortilla tightly to create a chimichanga shape.
- In a large pot, heat oil over medium-high heat. Carefully place 2-3 chimichangas in the pot at a time and fry for about 2 minutes on each side or until golden brown and crispy.
- Remove chimichangas from the pot and place on a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite toppings such as guacamole, salsa, sour cream, and shredded lettuce
