Chicken Chimichangas

  1. In a large skillet, heat olive oil over medium heat. Add onion, red bell pepper, and jalapeno. Cook for 5 minutes or until vegetables are soft.
  2. Add garlic and cook for an additional minute.
  3. Stir in cooked and shredded chicken, cumin, chili powder, salt, and black pepper. Cook for 2-3 minutes, stirring occasionally.
  4. Remove from heat and stir in shredded cheese.
  5. Place about 1/2 cup of the chicken mixture onto each tortilla. Fold in the sides and roll the tortilla tightly to create a chimichanga shape.
  6. In a large pot, heat oil over medium-high heat. Carefully place 2-3 chimichangas in the pot at a time and fry for about 2 minutes on each side or until golden brown and crispy.
  7. Remove chimichangas from the pot and place on a paper towel-lined plate to drain excess oil.
  8. Serve hot with your favorite toppings such as guacamole, salsa, sour cream, and shredded lettuce
