Chicken and Waffles

  1. Preheat your waffle iron according to manufacturer's instructions.
  2. In a shallow dish, mix together the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika.
  3. In another shallow dish, whisk together the buttermilk, egg, and hot sauce.
  4. Dip the chicken breasts in the flour mixture, then in the buttermilk mixture, and then back in the flour mixture, making sure the chicken is completely coated.
  5. Place the coated chicken on a greased baking sheet and bake at 375°F for 25-30 minutes, or until crispy and cooked through.
  6. In a separate bowl, prepare the waffle mix according to package instructions, using the water and melted butter.
  7. Once the waffle iron is hot, pour the batter onto the waffle iron and cook until golden brown and crisp, about 5 minutes.
  8. Serve the cooked chicken on top of the waffles and drizzle with maple syrup.
