Chicken and Waffles
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 cup buttermilk
- 1 egg
- 1/4 cup hot sauce
- 2 cups waffle mix
- 1 1/2 cups water
- 1/4 cup melted butter
- Maple syrup, for serving
Instructions:
- Preheat your waffle iron according to manufacturer's instructions.
- In a shallow dish, mix together the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika.
- In another shallow dish, whisk together the buttermilk, egg, and hot sauce.
- Dip the chicken breasts in the flour mixture, then in the buttermilk mixture, and then back in the flour mixture, making sure the chicken is completely coated.
- Place the coated chicken on a greased baking sheet and bake at 375°F for 25-30 minutes, or until crispy and cooked through.
- In a separate bowl, prepare the waffle mix according to package instructions, using the water and melted butter.
- Once the waffle iron is hot, pour the batter onto the waffle iron and cook until golden brown and crisp, about 5 minutes.
- Serve the cooked chicken on top of the waffles and drizzle with maple syrup.
