Chicken Alfredo Pasta
Ingredients:
- 1 pound of chicken breast
- 1 pound fettuccine pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 clove of garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions:
- Bring a large pot of salted water to a boil and cook fettuccine according to package instructions.
- In a separate pan, heat olive oil over medium-high heat.
- Add chicken breast and cook until no longer pink, about 6-7 minutes on each side.
- Remove chicken from pan and let it rest for a few minutes before slicing into bite-size pieces.
- In the same pan, add butter and garlic and cook until fragrant.
- Add heavy cream and bring to a simmer.
- Stir in grated Parmesan cheese and continue to simmer for 2-3 minutes, until the sauce thickens.
- Add sliced chicken to the pan and stir to combine.
- Season with salt and pepper, to taste.
- Add cooked fettuccine to the pan and toss with the sauce until well coated.
- Serve immediately and garnish with additional Parmesan cheese, if desired.
