Chicken Alfredo Pasta

  1. Bring a large pot of salted water to a boil and cook fettuccine according to package instructions.
  2. In a separate pan, heat olive oil over medium-high heat.
  3. Add chicken breast and cook until no longer pink, about 6-7 minutes on each side.
  4. Remove chicken from pan and let it rest for a few minutes before slicing into bite-size pieces.
  5. In the same pan, add butter and garlic and cook until fragrant.
  6. Add heavy cream and bring to a simmer.
  7. Stir in grated Parmesan cheese and continue to simmer for 2-3 minutes, until the sauce thickens.
  8. Add sliced chicken to the pan and stir to combine.
  9. Season with salt and pepper, to taste.
  10. Add cooked fettuccine to the pan and toss with the sauce until well coated.
  11. Serve immediately and garnish with additional Parmesan cheese, if desired.
