Cheesecake

  1. Preheat your oven to 350 degrees Fahrenheit (180°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/3 cup of sugar, and melted butter. Press the mixture onto the bottom of the prepared pan to form the crust.
  3. In a separate mixing bowl, beat the cream cheese and 1 cup of sugar until smooth. Add in the eggs, one at a time, and mix well after each addition. Mix in the vanilla extract, sour cream, and heavy cream until everything is well combined.
  4. Pour the filling over the crust and smooth the top with a spatula.
  5. Bake for 45 minutes, or until the center is almost set.
  6. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 30 minutes.
  7. Remove the cheesecake from the oven and allow it to cool completely. Refrigerate for at least 4 hours, or preferably overnight, before serving.
  8. Garnish with your favorite toppings, such as fresh berries or a drizzle of chocolate sauce, if desired.
