Ceviche
Ingredients:
- 1 lb white fish, such as tilapia or cod
- 1/3 cup freshly squeezed lime juice
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup freshly squeezed orange juice
- 1/2 cup diced red onion
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 jalapeno pepper, seeded and minced
- Salt and pepper, to taste
- 1 avocado, diced
- Tortilla chips, for serving
Instructions:
- Cut the fish into small, bite-sized pieces and place in a large mixing bowl.
- In a small bowl, whisk together the lime juice, lemon juice, and orange juice.
- Pour the juice mixture over the fish and stir to combine. Make sure all the fish is coated in the juice.
- Cover the bowl with plastic wrap and place in the refrigerator for at least 1 hour, stirring occasionally.
- After the fish has marinated, add in the red onion, tomatoes, cilantro, jalapeno, salt, and pepper. Stir to combine.
- Transfer the ceviche to a serving dish and top with diced avocado.
- Serve with tortilla chips and enjoy your fresh and delicious ceviche!
