Caramel Corn

Instructions:

  1. Preheat oven to 250 degrees F (120 degrees C).
  2. Pop the popcorn according to package instructions and set aside in a large mixing bowl.
  3. In a medium saucepan, melt the butter over medium heat.
  4. Add the brown sugar, corn syrup and salt to the melted butter, stirring continuously until the mixture boils.
  5. Let the mixture boil for 5 minutes without stirring.
  6. Remove the pan from heat and add in the baking soda, stirring until well combined.
  7. Pour the caramel mixture over the popcorn in the mixing bowl, stirring gently to coat all of the popcorn.
  8. Spread the caramel coated popcorn onto a baking sheet lined with parchment paper.
  9. Bake for 1 hour, stirring every 15 minutes.
  10. Remove from oven and let cool before breaking apart and serving.
