Cannoli
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 2 tbsp unsalted butter, melted
- 1/4 cup white wine
- 1 egg white
- 1 cup whole milk ricotta cheese
- 1/4 cup confectioners' sugar
- 1/2 tsp vanilla extract
- 1/4 cup mini chocolate chips
- 1/4 cup chopped pistachios
- Vegetable oil, for frying
- Confectioners' sugar, for dusting
Instructions:
- In a large bowl, mix together flour, granulated sugar, salt, and cinnamon.
- Add melted butter and white wine, and mix until a dough forms.
- Knead the dough for a few minutes until smooth and elastic.
- Cover the dough with plastic wrap and let it rest for 30 minutes.
- In a separate bowl, mix together the egg white, ricotta cheese, confectioners' sugar, and vanilla extract until well combined.
- Fold in the mini chocolate chips and chopped pistachios.
- Heat vegetable oil in a deep frying pan over medium-high heat.
- On a floured surface, roll out the dough into 1/8 inch thickness.
- Cut the dough into 3 inch rounds using a cookie cutter.
- Wrap each round of dough around a cannoli tube, sealing the edges with egg white.
