Cannoli

  1. In a large bowl, mix together flour, granulated sugar, salt, and cinnamon.
  2. Add melted butter and white wine, and mix until a dough forms.
  3. Knead the dough for a few minutes until smooth and elastic.
  4. Cover the dough with plastic wrap and let it rest for 30 minutes.
  5. In a separate bowl, mix together the egg white, ricotta cheese, confectioners' sugar, and vanilla extract until well combined.
  6. Fold in the mini chocolate chips and chopped pistachios.
  7. Heat vegetable oil in a deep frying pan over medium-high heat.
  8. On a floured surface, roll out the dough into 1/8 inch thickness.
  9. Cut the dough into 3 inch rounds using a cookie cutter.
  10. Wrap each round of dough around a cannoli tube, sealing the edges with egg white.
