Caldo Verde

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until tender, about 5 minutes.
  2. Add minced garlic and sauté for another 2 minutes.
  3. Pour in chicken or vegetable broth and bring to a boil.
  4. Add diced potatoes and cook until tender, about 10-15 minutes.
  5. Mash some of the potatoes to thicken the soup.
  6. Stir in chopped kale and let it cook for 5-10 minutes, until wilted.
  7. Season with salt and pepper to taste.
  8. In a separate pan, cook sliced chorizo or linguica sausage until browned and crispy.
  9. Serve the soup in bowls and top with slices of cooked sausage.
