Caldo Verde
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 pound potatoes, peeled and diced
- 1 pound kale, chopped
- Salt and pepper, to taste
- 1 pound chorizo or linguica sausage, sliced
Instructions:
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until tender, about 5 minutes.
- Add minced garlic and sauté for another 2 minutes.
- Pour in chicken or vegetable broth and bring to a boil.
- Add diced potatoes and cook until tender, about 10-15 minutes.
- Mash some of the potatoes to thicken the soup.
- Stir in chopped kale and let it cook for 5-10 minutes, until wilted.
- Season with salt and pepper to taste.
- In a separate pan, cook sliced chorizo or linguica sausage until browned and crispy.
- Serve the soup in bowls and top with slices of cooked sausage.
