Cajun Jambalaya
Ingredients:
- 1 pound andouille sausage, sliced
- 1 pound chicken breast, diced
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 stalks celery, chopped
- 4 cloves garlic, minced
- 2 cups long grain white rice
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions:
- In a large pot or Dutch oven, cook the sausage until browned. Remove from pot and set aside.
- Add the chicken to the pot and cook until browned. Remove from pot and set aside.
- Next, add the onion, bell pepper, celery, and garlic to the pot. Cook until softened.
- Stir in the rice and cook for a few minutes until slightly toasted.
- Add the diced tomatoes, chicken broth, and all the seasonings to the pot. Bring to a boil.
- Reduce heat to low and add the cooked sausage and chicken back to the pot. Cover and let simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
- Remove from heat and let sit for 5 minutes.
- Fluff the jambalaya with a fork. Serve in bowls and garnish with chopped green onions.
