Butter Chicken

  1. In a large skillet, heat some oil over medium heat.
  2. Add chicken and cook until browned on all sides. Remove and set aside.
  3. In the same skillet, add more oil if needed and sauté onions, garlic, and ginger until onions are translucent.
  4. Add cumin, coriander, paprika, garam masala, turmeric, and chili powder to the skillet. Cook for a few minutes until fragrant.
  5. Stir in tomato sauce and bring to a simmer.
  6. Return chicken to the skillet and mix well with the sauce.
  7. Cover and let simmer for 20 minutes.
  8. Uncover and stir in heavy cream and butter. Let cook for an additional 10 minutes.
  9. Season with salt to taste.
  10. Serve over rice and garnish with cilantro, if desired.</
