Brunswick Stew
Ingredients:
- 1 lb. chicken, cooked and diced
- 1 lb. pork, cooked and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz.) crushed tomatoes
- 1 can (14.5 oz.) chicken broth
- 1 cup frozen lima beans
- 1 cup frozen corn
- 1 cup frozen okra
- 1/2 cup barbecue sauce
- 1/4 cup ketchup
- 1 tbsp. Worcestershire sauce
- 1 tsp. salt
- 1 tsp. black pepper
- Hot sauce, to taste
Instructions:
- In a large pot or Dutch oven, sauté the onion and garlic until softened, about 5 minutes.
- Add the chicken, pork, tomatoes, and chicken broth to the pot and bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Add in the lima beans, corn, okra, barbecue sauce, ketchup, Worcestershire sauce, salt, black pepper, and hot sauce.
- Stir well and continue to simmer for an additional 30 minutes, or until all vegetables are tender.
- Taste and adjust seasonings as desired.
- Serve hot and enjoy your delicious Brunswick Stew!
