Broccoli Rabe
Ingredients:
- 1 bunch of broccoli rabe
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 teaspoons of red pepper flakes
- Salt to taste
Instructions:
- Wash the broccoli rabe and trim off any tough ends.
- In a large pot of boiling water, blanch the broccoli rabe for 2-3 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes.
- Once the garlic is fragrant, add the blanched broccoli rabe to the skillet. Sprinkle with salt to taste. Stir well to coat the broccoli rabe with the garlic and red pepper.
- Cover the skillet and let the broccoli rabe cook for about 5 minutes, stirring occasionally to prevent burning. The broccoli rabe should be tender but still have a slight crunch.
- Serve hot as a side dish or use in pasta dishes or sandwiches.
