Broccoli Cheddar Soup

  1. Cut the broccoli into small florets and set aside.
  2. In a large pot, melt the butter over medium heat.
  3. Add the diced onion and minced garlic to the pot and sauté until softened.
  4. Add the flour to the pot and stir until a roux forms.
  5. Slowly pour in the broth, stirring constantly to avoid lumps.
  6. Add the broccoli florets to the pot and bring to a boil.
  7. Reduce heat and let simmer for 10-12 minutes, or until broccoli is tender.
  8. Using an immersion blender or transferring to a regular blender, puree the soup until smooth.
  9. Stir in the shredded cheddar cheese until melted and fully incorporated.
  10. Slowly pour in the milk, stirring constantly.
  11. Season with salt and pepper to taste.
  12. Serve hot and enjoy!
