Broccoli Cheddar Soup
Ingredients:
- 1 head of broccoli
- 1 cup cheddar cheese, shredded
- 1 onion, diced
- 2 cloves of garlic, minced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 4 cups chicken or vegetable broth
- 1 cup milk
- Salt and pepper to taste
Instructions:
- Cut the broccoli into small florets and set aside.
- In a large pot, melt the butter over medium heat.
- Add the diced onion and minced garlic to the pot and sauté until softened.
- Add the flour to the pot and stir until a roux forms.
- Slowly pour in the broth, stirring constantly to avoid lumps.
- Add the broccoli florets to the pot and bring to a boil.
- Reduce heat and let simmer for 10-12 minutes, or until broccoli is tender.
- Using an immersion blender or transferring to a regular blender, puree the soup until smooth.
- Stir in the shredded cheddar cheese until melted and fully incorporated.
- Slowly pour in the milk, stirring constantly.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
