Breakfast Burrito
Ingredients:
- 4 large flour tortillas
- 6 eggs
- 1/4 cup milk
- 1/2 cup diced bell peppers (any color)
- 1/2 cup diced onions
- 1/2 cup diced ham or cooked bacon
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tablespoons oil
Instructions:
- In a large bowl, beat together the eggs, milk, salt, and pepper.
- Heat the oil in a large skillet over medium heat.
- Add the bell peppers and onions, and cook until they start to soften.
- Add the beaten eggs to the skillet and scramble until fully cooked.
- While the eggs are cooking, warm up the tortillas in a separate skillet or in the microwave for 15-20 seconds.
- Once the eggs are fully cooked, remove them from the heat and mix in the diced ham or bacon.
- Divide the egg mixture evenly between the warmed tortillas.
- Sprinkle shredded cheddar cheese on top of the egg mixture on each tortilla.
- Roll up the tortillas, tucking in the sides as you go.
- Optional: To make them crispy, heat a small amount of oil in a skillet and cook the burritos for 1-2 minutes on each side.
- Serve warm and enjoy your delicious breakfast burritos!
