Breakfast Burrito

  1. In a large bowl, beat together the eggs, milk, salt, and pepper.
  2. Heat the oil in a large skillet over medium heat.
  3. Add the bell peppers and onions, and cook until they start to soften.
  4. Add the beaten eggs to the skillet and scramble until fully cooked.
  5. While the eggs are cooking, warm up the tortillas in a separate skillet or in the microwave for 15-20 seconds.
  6. Once the eggs are fully cooked, remove them from the heat and mix in the diced ham or bacon.
  7. Divide the egg mixture evenly between the warmed tortillas.
  8. Sprinkle shredded cheddar cheese on top of the egg mixture on each tortilla.
  9. Roll up the tortillas, tucking in the sides as you go.
  10. Optional: To make them crispy, heat a small amount of oil in a skillet and cook the burritos for 1-2 minutes on each side.
  11. Serve warm and enjoy your delicious breakfast burritos!
