Boston Butt
Ingredients:
- 5-7 pound Boston Butt
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 tablespoon brown sugar
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 tablespoon dried oregano
- 1 cup chicken broth
Instructions:
- In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, brown sugar, chili powder, cumin, and dried oregano to create a spice rub.
- Rub the spice mixture all over the Boston Butt, making sure to cover all sides.
- Wrap the Boston Butt in plastic wrap and refrigerate for at least 2 hours or overnight.
- Preheat the oven to 275°F (135°C).
- Place the Boston Butt in a roasting pan and pour chicken broth over the top.
- Cover the roasting pan with foil and roast for 6-8 hours, or until the internal temperature reaches 200°F (93°C).
- Remove the foil and increase the oven temperature to 375°F (190°C).
- Roast for an additional 30 minutes, or until the top is crispy and browned.
- Remove from the oven and let the Boston Butt rest for 20-30 minutes before slicing and serving.
