Boston Butt

  1. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, brown sugar, chili powder, cumin, and dried oregano to create a spice rub.
  2. Rub the spice mixture all over the Boston Butt, making sure to cover all sides.
  3. Wrap the Boston Butt in plastic wrap and refrigerate for at least 2 hours or overnight.
  4. Preheat the oven to 275°F (135°C).
  5. Place the Boston Butt in a roasting pan and pour chicken broth over the top.
  6. Cover the roasting pan with foil and roast for 6-8 hours, or until the internal temperature reaches 200°F (93°C).
  7. Remove the foil and increase the oven temperature to 375°F (190°C).
  8. Roast for an additional 30 minutes, or until the top is crispy and browned.
  9. Remove from the oven and let the Boston Butt rest for 20-30 minutes before slicing and serving.
