Boston Baked Beans
Ingredients:
- 1 pound dried navy beans
- 1/2 pound salt pork
- 1/4 cup molasses
- 1/4 cup brown sugar
- 1 onion, chopped
- 1 teaspoon dry mustard
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt
- 2 cloves garlic, minced
- Water
Instructions:
- Soak beans in water overnight.
- Drain and rinse the beans.
- In a large pot, cover beans with water and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Drain the beans and place them in a baking dish.
- Preheat the oven to 325 degrees F (165 degrees C).
- In a saucepan, combine molasses, brown sugar, onion, dry mustard, black pepper, salt, and minced garlic. Cook until thickened, stirring constantly.
- Place the salt pork in the center of the beans and pour the molasses mixture over it.
- Add enough water to barely cover the beans and cover the dish with a lid or aluminum foil.
- Bake for about 6 hours or until the beans are tender, adding more water if necessary.
- Remove the lid or foil for the last 30 minutes of cooking to allow the beans to brown and the sauce to thicken.
- Serve hot as a side dish or as a main dish with cornbread.
