Boston Baked Beans

Instructions:

  1. Soak beans in water overnight.
  2. Drain and rinse the beans.
  3. In a large pot, cover beans with water and bring to a boil.
  4. Reduce heat and simmer for 30 minutes.
  5. Drain the beans and place them in a baking dish.
  6. Preheat the oven to 325 degrees F (165 degrees C).
  7. In a saucepan, combine molasses, brown sugar, onion, dry mustard, black pepper, salt, and minced garlic. Cook until thickened, stirring constantly.
  8. Place the salt pork in the center of the beans and pour the molasses mixture over it.
  9. Add enough water to barely cover the beans and cover the dish with a lid or aluminum foil.
  10. Bake for about 6 hours or until the beans are tender, adding more water if necessary.
  11. Remove the lid or foil for the last 30 minutes of cooking to allow the beans to brown and the sauce to thicken.
  12. Serve hot as a side dish or as a main dish with cornbread.
