Borscht
Ingredients:
- 8 cups beef or vegetable broth
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 2 medium carrots, peeled and diced
- 2 medium potatoes, peeled and diced
- 1/4 head of cabbage, chopped
- 1 can (15 oz) diced tomatoes
- 1 tbsp white vinegar
- 1 tsp sugar
- 1 tsp dried dill
- Salt and pepper to taste
- Sour cream and chopped fresh herbs for serving (optional)
Instructions:
- In a large pot, combine broth, onion, and garlic. Bring to a boil over medium heat.
- Add carrots, potatoes, cabbage, and tomatoes. Stir well.
- Reduce heat to low and cover the pot. Let it simmer for about 20 minutes, until the vegetables are tender.
- Add white vinegar, sugar, dried dill, salt, and pepper. Stir well and let it simmer for another 10 minutes.
- Serve hot with a dollop of sour cream and chopped fresh herbs if desired.
