Blackened Mahi Mahi

  1. In a small bowl, mix together blackening seasoning, garlic powder, onion powder, salt, cayenne pepper, paprika, dried thyme, and dried oregano.
  2. Brush Mahi Mahi fillets with olive oil on both sides.
  3. Sprinkle the blackening seasoning mixture over both sides of the fish, pressing the seasoning into the fillets.
  4. Heat a skillet over medium-high heat and add the coated fillets.
  5. Cook for 3-4 minutes on each side, until the fish flakes easily with a fork and is blackened on the outside.
