Blackened Fish

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the Cajun seasoning, oregano, thyme, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  3. Place the fish fillets on the prepared baking sheet and brush with melted butter.
  4. Sprinkle the seasoning mixture evenly over the fish fillets, using more or less depending on your preference for spiciness.
  5. Bake the fish for 12-15 minutes, or until it flakes easily with a fork.
  6. For a crispy crust, broil the fish on high for 2-3 minutes at the end of cooking time.
