Biscuits and Gravy
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup buttermilk
- 1 pound ground pork sausage
- 2 tablespoons all-purpose flour
- 2 cups milk
- Salt and pepper, to taste
Instructions:
- In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.
- Add in the cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse meal.
- Slowly pour in the buttermilk, stirring until just combined and a dough forms.
- Turn the dough out onto a lightly floured surface and use your hands to gently knead it a few times.
- Roll out the dough to about 1/2 inch thickness and use a 3-inch round biscuit cutter to cut out the biscuits. Re-roll the scraps if needed.
- Place the biscuits on a baking sheet lined with parchment paper and bake at 425 degrees Fahrenheit for 12-15 minutes, or until they are lightly golden on top.
- In a large skillet, cook the ground pork sausage over medium heat until it is fully browned and no longer pink.
- Add in 2 tablespoons of flour and stir to combine, cooking for an additional minute.
- Slowly pour in the milk, stirring constantly, and bring the mixture to a simmer.
