Biscuits and Gravy

  1. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.
  2. Add in the cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse meal.
  3. Slowly pour in the buttermilk, stirring until just combined and a dough forms.
  4. Turn the dough out onto a lightly floured surface and use your hands to gently knead it a few times.
  5. Roll out the dough to about 1/2 inch thickness and use a 3-inch round biscuit cutter to cut out the biscuits. Re-roll the scraps if needed.
  6. Place the biscuits on a baking sheet lined with parchment paper and bake at 425 degrees Fahrenheit for 12-15 minutes, or until they are lightly golden on top.
  7. In a large skillet, cook the ground pork sausage over medium heat until it is fully browned and no longer pink.
  8. Add in 2 tablespoons of flour and stir to combine, cooking for an additional minute.
  9. Slowly pour in the milk, stirring constantly, and bring the mixture to a simmer.</
