Biscotti
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup chopped almonds
- 1/2 cup dried cranberries
Instructions:
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper and set aside.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a separate bowl, cream the butter and sugar together until light and fluffy.
- Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Slowly fold in the dry ingredients until just combined. Then, mix in the chopped almonds and dried cranberries.
- Shape the dough into a log, about 14 inches long and 4 inches wide, and place it onto the prepared baking sheet. Bake for 30 minutes.
- Remove from the oven and let cool for 10-15 minutes. Using a sharp knife, slice the log into 1-inch pieces.
- Place the slices back onto the baking sheet and bake for an additional 15-20 minutes, or until they are lightly golden.
- Remove from the oven and let cool completely before serving. Enjoy your delicious homemade biscotti!
