Bean Burritos
Ingredients:
- 1 can of black beans
- 1/2 onion, diced
- 1/2 bell pepper, diced
- 1 clove of garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/4 cup water
- Shredded cheese
- Tortillas
- Optional toppings: salsa, avocado, sour cream
Instructions:
- In a pan, sauté the onion, bell pepper, and garlic until softened.
- Add the black beans, cumin, chili powder, and water to the pan. Cook for about 5 minutes until the beans are heated through and the water is mostly evaporated.
- Warm up the tortillas in a separate pan or in the microwave. Place a handful of shredded cheese on one side of the tortilla.
- Spoon the bean mixture onto the cheese and fold the tortilla over to create a burrito.
- Repeat for the remaining tortillas.
- Optional: Heat the burritos on a pan or in the microwave for a few minutes until the cheese is melted.
- Add desired toppings, such as salsa, avocado, or sour cream.
- Serve and enjoy your delicious bean burritos!
