Bangers and Mash

  1. Peel and chop the potatoes into small chunks. Place them in a large pot and cover with cold water. Bring to a boil and cook until tender, about 20 minutes.
  2. While the potatoes are cooking, heat a large skillet over medium-high heat. Add the sausages and cook for 8-10 minutes, turning occasionally, until they are browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the sliced onion and cook for a few minutes until softened. Pour in the beef or vegetable broth and stir, scraping up any brown bits from the bottom of the pan. Bring to a simmer.
  4. Reduce heat to low and return the sausages to the skillet, allowing them to simmer in the broth for about 10 minutes.
  5. While the sausages are simmering, drain the cooked potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash until the potatoes are smooth and creamy.
  6. To serve, place a generous scoop of mashed potatoes on a plate. Top with a couple of sausages and a spoonful of the onion gravy. Serve hot and enjoy your delicious Bangers and Mash!
