Banana Bread

  1. In a large mixing bowl, combine the flour, baking soda, and salt. Mix well.
  2. In a separate mixing bowl, cream together the melted butter and brown sugar.
  3. Add in the eggs, one at a time, mixing well after each addition. Then mix in the vanilla extract.
  4. Slowly add the mashed bananas to the wet ingredients and mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated. Do not overmix.
  6. If using walnuts, fold them into the batter.
  7. Pour the batter into a greased 9x5 inch loaf pan.
  8. Bake at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
