Baked Potato Soup
Ingredients:
- 6 medium sized potatoes
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper, to taste
- 1/4 cup chopped green onions
- 1/4 cup cooked and crumbled bacon
Instructions:
- Preheat your oven to 400°F (200°C).
- Poke holes in your potatoes using a fork and place them on a baking sheet lined with foil or parchment paper. Bake for 45 minutes to 1 hour, until they are tender.
- Take potatoes out of the oven and let them cool before cutting them into cubes.
- In a large pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute.
- Slowly pour in the milk while whisking constantly, until the mixture is smooth and thickened.
- Add in the diced potatoes and let it simmer for 10-15 minutes.
- Mix in the shredded cheese, sour cream, and salt and pepper to taste.
- Let the soup cook for an additional 10 minutes, or until the cheese is fully melted and the soup is heated through.
- Serve the soup in bowls and top with chopped green onions and crumbled bacon.
