Baked Potato Soup

  1. Preheat your oven to 400°F (200°C).
  2. Poke holes in your potatoes using a fork and place them on a baking sheet lined with foil or parchment paper. Bake for 45 minutes to 1 hour, until they are tender.
  3. Take potatoes out of the oven and let them cool before cutting them into cubes.
  4. In a large pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute.
  5. Slowly pour in the milk while whisking constantly, until the mixture is smooth and thickened.
  6. Add in the diced potatoes and let it simmer for 10-15 minutes.
  7. Mix in the shredded cheese, sour cream, and salt and pepper to taste.
  8. Let the soup cook for an additional 10 minutes, or until the cheese is fully melted and the soup is heated through.
  9. Serve the soup in bowls and top with chopped green onions and crumbled bacon.
