Baked Cod
Ingredients:
- 2 lbs cod fillets
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper, to taste
- 1 lemon, sliced
- Fresh parsley, for garnish
Instructions:
- Preheat your oven to 375 degrees F (190 degrees C).
- In a small bowl, mix together the lemon juice, olive oil, minced garlic, dried oregano, dried thyme, and salt and pepper.
- Place the cod fillets in a baking dish. Pour the lemon mixture over the fish, making sure each fillet is coated evenly.
- Place lemon slices on top of the fish for added flavor.
- Bake in the preheated oven for 20-25 minutes, or until the fish is flaky and cooked through.
- Garnish with fresh parsley and serve hot.
