Baba Ganoush
Ingredients:
- 1 large eggplant
- 3 cloves of garlic
- 1/4 cup tahini
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1/4 teaspoon cumin
- Salt to taste
- 1 tablespoon chopped parsley, for garnish
Instructions:
- Preheat your grill to medium-high heat or preheat your oven to 400 degrees F (200 degrees C).
- Poke several holes in the eggplant with a fork.
- If using a grill, place the eggplant directly on the hot grill and cook for about 20 minutes, turning occasionally, until the skin is completely charred and the flesh is soft.
- If using an oven, place the eggplant on a baking sheet and roast for 45 minutes, until the skin is completely charred and the flesh is soft.
- Once cooked, remove the eggplant from the heat and let it cool for a few minutes.
- Cut the eggplant in half and scoop out the flesh into a food processor or blender.
- Add the garlic, tahini, lemon juice, olive oil, cumin, and salt. Blend until smooth.
- Taste the baba ganoush and adjust the seasoning if needed.
- Serve in a bowl and garnish with chopped parsley.
- Enjoy with pita bread, vegetables, or as a topping on sandwiches!
