Baba Ganoush

  1. Preheat your grill to medium-high heat or preheat your oven to 400 degrees F (200 degrees C).
  2. Poke several holes in the eggplant with a fork.
  3. If using a grill, place the eggplant directly on the hot grill and cook for about 20 minutes, turning occasionally, until the skin is completely charred and the flesh is soft.
  4. If using an oven, place the eggplant on a baking sheet and roast for 45 minutes, until the skin is completely charred and the flesh is soft.
  5. Once cooked, remove the eggplant from the heat and let it cool for a few minutes.
  6. Cut the eggplant in half and scoop out the flesh into a food processor or blender.
  7. Add the garlic, tahini, lemon juice, olive oil, cumin, and salt. Blend until smooth.
  8. Taste the baba ganoush and adjust the seasoning if needed.
  9. Serve in a bowl and garnish with chopped parsley.
  10. Enjoy with pita bread, vegetables, or as a topping on sandwiches!
