Avocado Salad

  1. Slice avocados in half and remove the pit.
  2. Scoop out avocado flesh and dice into chunks.
  3. In a large mixing bowl, combine diced avocado, red onion, tomato, corn, black beans, bell peppers, and cilantro.
  4. Add lime juice, salt, and pepper to the mixture and gently toss to combine.
  5. Serve immediately as a side dish or as a topping for tacos or burrito bowls. Enjoy!
