Avocado Salad
Ingredients:
- 2 ripe avocados
- 1/4 red onion, diced
- 1 tomato, diced
- 1/4 cup corn kernels
- 1/4 cup black beans, rinsed and drained
- 1/4 cup diced bell peppers
- 1/4 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper, to taste
Instructions:
- Slice avocados in half and remove the pit.
- Scoop out avocado flesh and dice into chunks.
- In a large mixing bowl, combine diced avocado, red onion, tomato, corn, black beans, bell peppers, and cilantro.
- Add lime juice, salt, and pepper to the mixture and gently toss to combine.
- Serve immediately as a side dish or as a topping for tacos or burrito bowls. Enjoy!
