Arroz con Pollo

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add chicken and cook until golden brown on all sides.
  3. Remove chicken and set aside.
  4. In the same pot, add onions, bell pepper, and garlic. Cook until vegetables are soft.
  5. Stir in cumin, chili powder, paprika, salt, and pepper.
  6. Add in rice and stir until evenly coated with spices.
  7. Pour in diced tomatoes and chicken broth. Bring to a boil.
  8. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
  9. After 20 minutes, add in the cooked chicken and stir to combine.
  10. Cover and continue to simmer for an additional 15 minutes, or until rice is fully cooked.
  11. Remove from heat and let it sit for 5 minutes.
  12. Garnish with chopped cilantro and lime slices before serving.
