Arroz con Pollo
Ingredients:
- 2 cups of white rice
- 1 pound of chicken, cut into bite-sized pieces
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1 teaspoon of paprika
- Salt and pepper, to taste
- 1/4 cup of chopped cilantro
- 1 lime, sliced
Instructions:
- In a large pot, heat olive oil over medium-high heat.
- Add chicken and cook until golden brown on all sides.
- Remove chicken and set aside.
- In the same pot, add onions, bell pepper, and garlic. Cook until vegetables are soft.
- Stir in cumin, chili powder, paprika, salt, and pepper.
- Add in rice and stir until evenly coated with spices.
- Pour in diced tomatoes and chicken broth. Bring to a boil.
- Reduce heat to low and simmer for 20 minutes, stirring occasionally.
- After 20 minutes, add in the cooked chicken and stir to combine.
- Cover and continue to simmer for an additional 15 minutes, or until rice is fully cooked.
- Remove from heat and let it sit for 5 minutes.
- Garnish with chopped cilantro and lime slices before serving.
