Arancini (Rice Balls)
Ingredients:
- 2 cups cooked arborio rice
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped parsley
- 1/4 cup chopped basil
- 1/4 cup chopped sun-dried tomatoes
- 1/2 cup grated mozzarella cheese
- 2 eggs, beaten
- 1/2 cup breadcrumbs
- Oil for frying
- Salt and pepper, to taste
Instructions:
- In a large mixing bowl, combine cooked rice, parmesan cheese, parsley, basil, sun-dried tomatoes, mozzarella cheese, and beaten eggs. Mix well.
- Season with salt and pepper to taste.
- Using your hands, shape the mixture into golf-sized balls.
- Place breadcrumbs in a shallow dish and roll each rice ball in the breadcrumbs until fully coated.
- In a deep pan, heat oil over medium-high heat.
- Carefully place the coated rice balls into the hot oil and fry until golden brown, about 3-4 minutes.
- Remove from oil and place on a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite marinara sauce. Enjoy!
