Arancini (Rice Balls)

  1. In a large mixing bowl, combine cooked rice, parmesan cheese, parsley, basil, sun-dried tomatoes, mozzarella cheese, and beaten eggs. Mix well.
  2. Season with salt and pepper to taste.
  3. Using your hands, shape the mixture into golf-sized balls.
  4. Place breadcrumbs in a shallow dish and roll each rice ball in the breadcrumbs until fully coated.
  5. In a deep pan, heat oil over medium-high heat.
  6. Carefully place the coated rice balls into the hot oil and fry until golden brown, about 3-4 minutes.
  7. Remove from oil and place on a paper towel-lined plate to drain excess oil.
  8. Serve hot with your favorite marinara sauce. Enjoy!
