Apricot Chicken
Ingredients:
- 4 chicken breasts, boneless and skinless
- Salt and pepper to taste
- 1 cup apricot preserves
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon white vinegar
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1/4 teaspoon red pepper flakes
- 1/4 cup water
- 2 tablespoons olive oil
Instructions:
- Preheat oven to 375 degrees F.
- Season the chicken breasts with salt and pepper on both sides.
- In a small bowl, mix together apricot preserves, honey, soy sauce, white vinegar, minced garlic, grated ginger, red pepper flakes, and water.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breasts to hot skillet and cook for 3-4 minutes on each side, until golden brown.
- Transfer chicken breasts to a baking dish and pour apricot mixture over the top, making sure all pieces are coated.
- Bake for 20-25 minutes, or until chicken is fully cooked and the sauce is bubbly.
