Apricot Chicken

  1. Preheat oven to 375 degrees F.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a small bowl, mix together apricot preserves, honey, soy sauce, white vinegar, minced garlic, grated ginger, red pepper flakes, and water.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add chicken breasts to hot skillet and cook for 3-4 minutes on each side, until golden brown.
  6. Transfer chicken breasts to a baking dish and pour apricot mixture over the top, making sure all pieces are coated.
  7. Bake for 20-25 minutes, or until chicken is fully cooked and the sauce is bubbly.
