Antipasto Salad
Ingredients:
- 1/2 cup sliced pepperoni
- 1/2 cup sliced salami
- 1/2 cup sliced prosciutto
- 1/2 cup chopped artichoke hearts
- 1/2 cup pitted kalamata olives
- 1/2 cup marinated mushrooms
- 1/2 cup roasted red peppers, drained and chopped
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese
- 6 cups mixed lettuce greens
- Salt and black pepper, to taste
Instructions:
- In a large salad bowl, combine the pepperoni, salami, prosciutto, artichoke hearts, olives, mushrooms, roasted red peppers, red onion, parsley, and feta cheese.
- Add the mixed lettuce greens to the bowl, season with salt and black pepper, and toss gently to combine.
- Serve immediately or cover and refrigerate until ready to serve.
