  1. In a large bowl, sift together flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat together milk, egg, and melted butter.
  3. Add wet ingredients to dry ingredients and mix until just blended. Do not overmix; batter should be slightly lumpy.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat.
  5. Pour or scoop batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with remaining batter, adding more oil to the griddle if needed.
  7. Serve hot with desired toppings such as syrup, butter, fruit, or whipped cream.
