Aloo Gobi
Ingredients:
- 1 large potato, diced
- 1 small cauliflower, cut into small florets
- 1 onion, chopped
- 1 tomato, chopped
- 1 inch ginger, minced
- 2 cloves of garlic, minced
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- Oil for cooking
Instructions:
- In a large pan, heat oil over medium heat.
- Add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions, ginger, garlic, and green chili. Saute until the onions turn translucent.
- Add turmeric powder, coriander powder, and garam masala. Mix well.
- Add chopped tomatoes and cook until they turn mushy.
- Add diced potato and cauliflower florets. Mix well to coat the vegetables with the spices.
- Season with salt and cover the pan. Let it cook for about 15-20 minutes, stirring occasionally.
- Once the vegetables are cooked, remove the lid and cook for a few more minutes to dry up any excess water.
- Serve hot and enjoy your delicious Aloo Gobi!
