  1. In a large pan, heat oil over medium heat.
  2. Add cumin seeds and mustard seeds, and let them splutter.
  3. Add chopped onions, ginger, garlic, and green chili. Saute until the onions turn translucent.
  4. Add turmeric powder, coriander powder, and garam masala. Mix well.
  5. Add chopped tomatoes and cook until they turn mushy.
  6. Add diced potato and cauliflower florets. Mix well to coat the vegetables with the spices.
  7. Season with salt and cover the pan. Let it cook for about 15-20 minutes, stirring occasionally.
  8. Once the vegetables are cooked, remove the lid and cook for a few more minutes to dry up any excess water.
  9. Serve hot and enjoy your delicious Aloo Gobi!
