Almond Joy Cookies

  1. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add in the eggs, one at a time, followed by the vanilla extract. Mix well.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture into the wet mixture, mixing until just combined.
  4. Stir in the shredded coconut, chocolate chips, and chopped almonds until evenly distributed throughout the dough.
  5. Cover the dough and refrigerate for at least 1 hour.
  6. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  7. Using a spoon or cookie scoop, drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
