Almond Joy Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup shredded coconut
- 1 cup semisweet chocolate chips
- 1/2 cup chopped almonds
Instructions:
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the eggs, one at a time, followed by the vanilla extract. Mix well.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture into the wet mixture, mixing until just combined.
- Stir in the shredded coconut, chocolate chips, and chopped almonds until evenly distributed throughout the dough.
- Cover the dough and refrigerate for at least 1 hour.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Using a spoon or cookie scoop, drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
